Pesto Recipe
An easy, tasty solution to your pasta comfort food craving
If you love fresh basil but can't keep it fresh, make and freeze this pesto. I scoop the pesto into an ice cube tray and then transfer the frozen cubes into a plastic freezer bag and use 1 or 2 cubes in different pasta dishes. Especially delicious with shrimp sauteed in butter and lemon!
Ingredients
- 6-8 large stalks basil, leaves and stalks
- 6-8 large cloves of garlic
- 1/2 cup pine nuts
- 1/2 cup grated parmesan cheese
- salt
- fresh ground pepper
- 1/4 - 1/3 cup extra virgin olive oil
Cooking Method
- There's no cooking involved! Just throw all the ingredients except the olive oil in the food processor and pulse-chop a few times.
- Then turn on full and stream in the olive oil until it's all well-blended and creamy.
