Elk Meat
Recipes for a Heart-Healthy Red Meat Alternative
As we become more and more health conscious about our diet, the market becomes more and more accomodating. Elk meat is a high-protein, low fat alternative to red meat that is becoming more widely available in North America. Many elk meat retailers and farmers also promote naturally raised farm elk free of hormones, steroids and antibiotics. Elk meat is a type of venison, but with very little of the 'gamey' taste of other venison.
You can buy elk meat online and in farmers markets. The price is a bit higher than beef, but the protein content will fill you up with fewer calories, less fat and less of the artificial 'enhancements' that have invaded our food to our detriment for the past few decades.
Cooking Elk Meat and Venison: Tips
Elk meat is very lean and dense, with very little marbling that you find in 'traditional' red meats. The same tips I recommend in the cooking ostrich section will serve you well with elk and other venison steak recipes.
Elk Meat Recipes
Cook elk and other venison using just about any variation on your favourite traditional beef recipes, but with shorter cooking times to prevent the elk meat from drying out. Here are a few to get you started:
