Cooking with a Crock Pot
Crock pot cooking is easy and convenient, and provides intense flavouring for dishes that you don’t get with other methods of cooking. I use a crockpot or slow cooker for many of my favourite comfort food recipes too.
A few basic tips for cooking with a crock pot (recipe-specific crockpot tips can be found in the yellow box attached to each recipe):
- the slow cooking intensifies the flavours of vegetables and herbs especially, so you will want to cut down some measurements called for for herbs and spices in recipes intended for the stove top or oven.
- add only half of the full amount of herbs and spices at the beginning and then taste an hour or two before serving time for more
- don’t remove the lid throughout the cooking – it increases required cooking time considerably
