Everyone has their favourite comfort food recipes. Alot of my favourite comfort food is creamy, cheesy, saucy -- foods that warm you up in the winter and refresh you in the summer with memories of times as much as of flavours and textures.
Sometimes it's an old favourite from a can that always accompanied something else at a meal, like creamed corn with boiled potatoes and meatloaf. Alot of my favourites, though, start with a fresh, homemade stock or sauce, that I make in large batches in the crockpot and freeze for ready-access when the cravings hit.
