If you travel Australia, you'll find that Australian Food is an intriguing fusion of cooking styles and ingredients from a very diverse immigrant population and very old, indigenous ingredients that are being re-introduced into both the landscape and the cuisine after having been virtually eradicated by earlier immigrants.
While I'm not likely to find kangaroo meat or other distinctly Australian ingredients in my local market here in Canada, I have come across some emu and kangaroo recipes that look like they could be nicely adapted for some beef or ostrich dishes that will appear over time.
